THE ROLE OF FOOD SCIENCE IN HUMAN NUTRITION

ABSTRACT

Food science, in a nutshell, is the scientific study of food from harvesting to processing, storage, and packaging. Human nutrition is now concerned with how this food is used in the human body. Because both cases refer to food, it demonstrates that the two terms are related. Food science, in fact, plays an important role in human nutrition by broadening our understanding of the foods we eat. Among the roles of foods science in human nutrition are: food processing as it has demonstrated various ways in which one food commodity can be processed into different forms; food fortification and enrichment as it has demonstrated that nutrients that were not present or that were present but lost during processing are added to the food at even greater concentrations levels; as well as food preservation and storage, which demonstrate how to keep our foods safe for future use.
