Production And Fermentation Of Alcohol From Palm Wine

 

Abstract

 

This exploration work was arrived as the expression and product of alcohol from the turmoil of win wine. A fresh win wine was ated which was attained from Emene in Enugu State. The characteristics that was tested ahead and after turmoil were; specific graveness, refractive indicator and PH value of the fermentated win wine was first determined, after which samples were formulated for turmoil. The incentive that was used in the course of turmoil process was the chef’s incentive( sacchromycess Cerevisae). 10 samples of 400 ml each of the win wine were used for the turmoil process, with variations in their incentive content and days of turmoil. These were done under aerobic condition. After turmoil, the samples were independently distilled after turmoil with their corresponding values of; specific graveness, by volume by weight attention and viscosity of the distillates determined and recorded independently. Further more, the distillates attained were separated and added together consequently to be re – distilled. therefore, their corresponding values of by volume, by weight, specific graveness of the re – distilled products were determined and recorded consequently. From the result attained, it shows that the minimal volume of alcohol attained is27.52 while the standard volume of alcohol needed is 37 minimum.
